Am looking at purchasing an updated printer and am not sure which one too go for out of these 2. Am mainly going to print big models. Which one would you recommend

Use-cases are so varied it is impossible to recommend one or the other, unless one has direct experience of using both. They seem to have similar features (core-XY, AMS, enclosed) except the significantly larger build volume of the Creality... but that also means it would take up more desk space.
Be aware that when you print in PLA, you'll probably want to keep the cabinet door open (and that takes up even more space). The reason is that if the print volume is not just actively heated but also actively cooled, with the enclosed space the temperature can get close to the glass transition of PLA.
If I were about to spend that kind of money, I would be looking at YouTube videos from the independent reviewers. Of particular interest to me would be the range of build plate materials available for each printer, and their suitability for the range of filaments I was likely to use.
Something else to consider: what are the reputations of Creality vs Bambu for support, and availability/cost of spare parts? Check that out for yourself, I'm not hinting at a win one way or the other.
You might also want to check out the controversy of Bambu firmware revision.

You should choose the Creality K2 Plus if your primary task and core need is to print truly large models, and you plan to extensively use engineering plastics like ABS, ASA filament, and PC for large functional parts. However, if you are seeking ultimate stability, reliability, and a seamless user experience (as the X1C is a mature product proven by millions of users) and want the most mature and reliable multi-color printing system on the market, then the Bambu Lab X1-Carbon is the recommended choice.
