Irregular nozzle temp

Hi all new to the forum not been printing for long i have an ender3 pro had to replace the hotend and wiring due to filament creep out and causing a real mess my problem is that after new hotend install I can't get a level temp it rises to 200 but then continues to rise 210 215 then starts to drop and drop then it rises again there is no level or stable temp ive checked the thermal sensor at the hotend and its inserted correctly and its plugged into the mainboard correctly anyone have any idea ,thanks in advance for any help.
